Cucumber Salad

Makes 4-6 servings

  • 1 English cucumber, very thinly sliced
  • 2 tbsp soy sauce
  • 1 teaspoon sesame oil
  • 1/3 cup white wine vinegar
  • 1/2 tablespoon honey or agave nectar
  • Salt and pepper
  • 1/2 tbsp Micro mint or regular mint, torn

In a large bowl, toss together the cucumber, soy sauce, sesame oil, vinegar, honey, and salt and pepper. Chill for 20 minutes.

Transfer to a serving bowl, leaving any excess water behind. Toss with mint. Season with several grinds of pepper and serve.
