Melon Prosciutto Mozzarella Skewers

Makes: 12 servings

INGREDIENTS:

  • 1 large ripe cantaloupe
  • 2 slices prosciutto
  • Basil leaves, washed and dried (about 6-8 leaves, depending on how big they are)
  • 15 mozzarella balls or squares
  • Balsamic glaze
  • Toothpicks

DIRECTIONS:

  1. Wash the outside of the cantaloupe. Using a large sharp knife, cut the cantaloupe in half. Use a spoon to scrape out the seeds. Use a melon baller to scoop balls of cantaloupe out of the melon flesh. Alternatively, dice into small bite-size pieces. Set aside.
  2. Cut mozzarella into bite-size squares. Set aside.
  3. To make the skewers: layer melon, proscuitto, basil, and mozzarella onto the skewer. Repeat until you have the desired amount.
  4. Drizzle with balsamic glaze to serve.
