Bacon Pimento Cheese

Makes: 4 cups

Ingredients

  • 8 thick-cut bacon slices, chopped
  • 1 ½ cups mayonnaise
  • 1 tsp grainy or dijon mustard
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper
  • 1- 4-oz jar diced pimientos, drained
  • 1-8-oz block extra-sharp cheddar cheese, shredded (about 2 cups)
  • 1-8-oz block sharp white cheddar cheese, shredded (about 2 cups)

Directions

  1. Cook bacon in a skillet over medium, stirring occasionally, until crisp, 10 to 12 minutes. Transfer bacon to a paper towel-lined plate, and let cool completely, about 5 minutes and chop finely.
  2. Stir together mayonnaise, mustard, onion powder, garlic powder, smoked paprika, and cayenne pepper in a medium bowl until combined. Fold in pimentos.
  3. Reserve 1 tablespoon cooked bacon. Fold cheese and remaining cooked bacon into mayonnaise mixture until combined. Sprinkle with reserved bacon.
