Bacon Pimento Cheese

Makes: 4 cups
Ingredients
- 8 thick-cut bacon slices, chopped
- 1 ½ cups mayonnaise
- 1 tsp grainy or dijon mustard
- 1 tsp onion powder
- 1 tsp garlic powder
- ½ tsp smoked paprika
- ¼ tsp cayenne pepper
- 1- 4-oz jar diced pimientos, drained
- 1-8-oz block extra-sharp cheddar cheese, shredded (about 2 cups)
- 1-8-oz block sharp white cheddar cheese, shredded (about 2 cups)
Directions
- Cook bacon in a skillet over medium, stirring occasionally, until crisp, 10 to 12 minutes. Transfer bacon to a paper towel-lined plate, and let cool completely, about 5 minutes and chop finely.
- Stir together mayonnaise, mustard, onion powder, garlic powder, smoked paprika, and cayenne pepper in a medium bowl until combined. Fold in pimentos.
- Reserve 1 tablespoon cooked bacon. Fold cheese and remaining cooked bacon into mayonnaise mixture until combined. Sprinkle with reserved bacon.
