Breakfast Sandwich

Makes: 2 servings
Ingredients
- 2 english muffins
- 2 whole eggs
- 4 slices bacon or 2 sausage patties
- Slices of cheese of choice
Directions
- Begin cooking protein by placing bacon and/or sausage patties on small sheet tray or in glass cookware. Place racks in Speed Oven and touch convection on the touchpad. Choose 350°F and set time for 12 minutes. Allow oven to preheat. Place sheet pan/dishes of bacon and/or sausage in oven. After 12 minutes, check desired consistency. Remove sausage if cooked through and continue cooking bacon strips if needed. Remove and let rest while you cook english muffins and eggs.
- Wrap english muffins in damp paper towels and place on Speed Oven turntable. Crack each egg into small ramekin sprayed with non-stick spray and place on speed oven turntable. Microwave for 45 seconds and remove english muffins.
- Unwrap, cut in half and place cheese on each side of the muffin. Return to speed oven and continue microwaving for another 30 seconds until eggs are cooked to desired consistency and cheese is melted.
