Makes: 6-8 servings

INGREDIENTS:

● 4 medium sweet potatoes, scrubbed clean and cut into ½” rounds (can be peeled if desired)
● 1 tbsp olive oil
● ½ cup (4 oz) softened goat cheese or cream cheese
● ¼ cup toasted pecans or nuts of choice
● 2 tbsp honey
● Red pepper flakes
● Thyme leaves for garnish (optional)
● Salt and pepper

DIRECTIONS:

Toss sweet potato slices in olive oil and place on microwave safe/oven safe roasting pan/dish. Place on the turntable in your Wolf Speed Oven. Alternatively, place sweet potato slices on tall riser sitting on turntable. Set the Speed Oven to Micro Roast set to 400°F. Roast for about 12 minutes. Remove and cool slightly. Top with goat cheese/cream cheese and toasted nuts. Drizzle with honey and top with red pepper flakes, flake or kosher salt, and pepper. Garnish with thyme leaves if desired.
