Cucumber Margaritas
Makes: 8 cocktails
Ingredients
- 2 large English cucumbers, peeled and rough chopped + 1 whole cucumber sliced
- 6 tbsp fresh lime juice, about 3 limes, plus one lime cut for rim of glass
- 1 ½ cups coconut water
- 1 ¼ cups silver tequila
- ½ cup simple syrup
- ¼ cup cilantro stems and leaves + more for garnish
- Tajin for rim of cocktail glass
Directions
- Place cut up cucumbers in a blender and puree. Strain into a container with fine mesh strainer. To a large container, combine lime juice, coconut water, tequila, simple syrup, chopped cilantro, and cucumber puree. Refrigerate until cold.
- Use lime slice to rim cocktail glass. Dip in tajin. Pour in cocktail and garnish with cucumber slice and cilantro.
Infusion
To a vacuum seal bag, combine 1 sliced cucumber, tequila, and ¼ cup cilantro stems and leaves. Seal and leave to infuse in the refrigerator for up to 1 month. When ready to serve, combine cut up cucumber like above with ingredients listed in instructions. Use infused cucumbers to garnish.
