Roasted Baby Potatoes
Makes 4-6 servingsÂ
- 1 1/3 pounds baby potatoes, scrubbed cleanÂ
- 3 tablespoons unsalted butter, meltedÂ
- 3 tablespoons olive oilÂ
- Salt and pepper
- Thinly chopped chivesÂ
Steam potatoes in wolf convection steam oven for 10-12 mins to get the cooking process going. Remove, and when ready to serve, preheat oven to 350. Toss potatoes in butter, oil, and salt. Place in individual cast irons or one sheet pan or dish, and roast in oven for 20-30 mins or until slightly charred and cooked through. Salt again if needed. Sprinkle with chives.Â
