Surf and Turf Burger

Makes: 2 servings

INGREDIENTS:

  • 2 Ground Waygu 20oz Patties
  • Brown Butter Mayo
    • 1/2 cup Mayo
    • 1/4 cup Butter
    • 1/2 Lemon
  • 4 large pieces of Bibb Lettuce
  • Corn Salad
    • 10 Cherry Tomatoes, cut in half
    • 2 ears of Corn
    • 2 Tbsp Olive Oil
    • 1 Tbsp Basil, roughly chopped
    • Salt and Pepper
  • Lobster
    • 2 Lobster Tails
    • 1/3 cup Butter
    • 2 pieces of Celery, thinly sliced
  • 2 Brioche Buns
  • 2 Slices of Mazzarella Cheese

DIRECTIONS:

  1. For the corn salad, grill your ears of corn and cut of husk. Mix with olive oil, basil, cherry tomatoes, and season with salt and pepper.
  2. For the brown butter mayo, cook butter in a sauce pan or saute pan until it starts to brown, watching closely so it does not burn. Let cook and mix with mayo and lemon juice.
  3. For the lobster, drop the tails in boiling water and cook for approximately 6-7 minutes. Remove immediately and place in ice water. Remove meat from tails and reserve. Slice celery and melt with butter over low heat. Add lobster meat and warm over low heat and hold.
  4. Sear or grill patties to desired temperature.
  5. Toast buns on griddle until lightly browned.
  6. Place cheese on patties and broil on high until cheese is melted.
  7. Assemble and enjoy!
