Burgundy Burger

Makes: 2 servings
INGREDIENTS:
- 2 Ground Waygu 20oz Patties
- Goat Cheese Mayo
- 1/3 cup Mayo
- 1/3 cup Goat Cheese
- 2 large pieces of Bibb Lettuce
- Red Wine Onions and Mushrooms
- 3/4 cup mixed sliced mushrooms
- 2 red onions, thinly sliced
- 1/2 cup olive oil
- 1/2 cup red wine
- Salt and Pepper
- 2 Brioche Buns
- 2 Slices of Gouda Cheese
DIRECTIONS:
- For the goat cheese mayo, mix ingredients until well combined and reserve.
- Sear or grill patties to desired temperature.
- In separate pans, begin to cook red onions and mushrooms with olive oil. Season with salt and pepper. Once onions and mushrooms begin to brown, combine and cook for another 2-3 minutes. Deglaze with red wine, simmering until reduced into a glossy, jammy glaze.
- Toast buns on griddle until lightly browned.
- Place cheese on patties and broil on high until cheese is melted.
- Assemble and enjoy!
