Burgundy Burger

Makes: 2 servings

INGREDIENTS:

  • 2 Ground Waygu 20oz Patties
  • Goat Cheese Mayo
    • 1/3 cup Mayo
    • 1/3 cup Goat Cheese
  • 2 large pieces of Bibb Lettuce
  • Red Wine Onions and Mushrooms
    • 3/4 cup mixed sliced mushrooms
    • 2 red onions, thinly sliced
    • 1/2 cup olive oil
    • 1/2 cup red wine
    • Salt and Pepper
  • 2 Brioche Buns
  • 2 Slices of Gouda Cheese

DIRECTIONS:

  1. For the goat cheese mayo, mix ingredients until well combined and reserve.
  2. Sear or grill patties to desired temperature.
  3. In separate pans, begin to cook red onions and mushrooms with olive oil. Season with salt and pepper. Once onions and mushrooms begin to brown, combine and cook for another 2-3 minutes. Deglaze with red wine, simmering until reduced into a glossy, jammy glaze.
  4. Toast buns on griddle until lightly browned.
  5. Place cheese on patties and broil on high until cheese is melted.
  6. Assemble and enjoy!
