Summer Salad

Makes: 4 servings

INGREDIENTS:

  • 2 baby romaine cut in half lengthwise
  • 1 pint cherry tomatoes, cut in half and marinated in olive oil, salt and pepper
  • 2 ears of corn or 2 cups kernels
  • Torn basil leaves
  • Marinated feta crumbled or grilled halloumi cheese, cubed

CREAMY AVOCADO DRESSING INGREDIENTS:

  • 1 ripe avocado
  • 3 cloves of garlic
  • ¼ cup olive oil
  • ¼ cup of fresh cilantro leaves
  • ¼ cup of lime juice freshly squeezed
  • ½ cup of water
  • salt and pepper to taste

DIRECTIONS:

Combine ingredients in food processor or blender and adjust for consistency and seasoning.
