Summer Salad

Makes: 4 servings
INGREDIENTS:
- 2 baby romaine cut in half lengthwise
- 1 pint cherry tomatoes, cut in half and marinated in olive oil, salt and pepper
- 2 ears of corn or 2 cups kernels
- Torn basil leaves
- Marinated feta crumbled or grilled halloumi cheese, cubed
CREAMY AVOCADO DRESSING INGREDIENTS:
- 1 ripe avocado
- 3 cloves of garlic
- ¼ cup olive oil
- ¼ cup of fresh cilantro leaves
- ¼ cup of lime juice freshly squeezed
- ½ cup of water
- salt and pepper to taste
DIRECTIONS:
Combine ingredients in food processor or blender and adjust for consistency and seasoning.
