Black Pepper Parmesan Green Beans

Makes: 6 servings
Ingredients
- 1# green beans, trimmed (can use haricot verts)
- ½ cup olive oil
- 1 large shallot, thinly sliced
- Cracked black pepper
- 1 garlic clove, finely grated
- ¼ cup apple cider vinegar
- 1 tbsp honey
- 4 oz Parmesan, cut into small pieces, plus more finely grated for serving
- Kosher salt
Directions
- Blanch green beans and shock by boiling in salted water for 6-7 minutes, depending on thickness, and immediately shock in an ice bath.
- Drain and pat dry and cut into small pieces. Set aside.
- In a saute pan, heat olive oil and fry shallots until golden brown. Remove with slotted spoon, season with salt and set aside.
- Add cracked black pepper to pan. Be generous. Saute until fragrant.
- Add in garlic and saute for 1 minute, do not let brown. Add in parmesan cheese and stir to melt. Add in apple cider vinegar and honey. Season with salt.
- Add in green beans and toss to combine with sauce. Place in serving dish and garnish with crispy shallots.
