Black Pepper Parmesan Green Beans

Makes: 6 servings

Ingredients

  • 1# green beans, trimmed (can use haricot verts)
  • ½ cup olive oil
  • 1 large shallot, thinly sliced
  • Cracked black pepper
  • 1 garlic clove, finely grated
  • ¼ cup apple cider vinegar
  • 1 tbsp honey
  • 4 oz Parmesan, cut into small pieces, plus more finely grated for serving
  • Kosher salt

Directions

  1. Blanch green beans and shock by boiling in salted water for 6-7 minutes, depending on thickness, and immediately shock in an ice bath.
  2. Drain and pat dry and cut into small pieces. Set aside.
  3. In a saute pan, heat olive oil and fry shallots until golden brown. Remove with slotted spoon, season with salt and set aside.
  4. Add cracked black pepper to pan. Be generous. Saute until fragrant.
  5. Add in garlic and saute for 1 minute, do not let brown. Add in parmesan cheese and stir to melt. Add in apple cider vinegar and honey. Season with salt.
  6. Add in green beans and toss to combine with sauce. Place in serving dish and garnish with crispy shallots.
