Pork Marbella with Parmesan Garlic Roasted Green Beans

Pork Marbella Ingredients
- 2 (1#) pork tenderloins
- 2 tsp kosher salt 2
- 1 cup dry white wine
- ½ cup pitted dates, torn in half
- â…“ cup packed light brown sugar
- ¼ cup capers, plus 1 Tbsp. caper brine
- ½ cup pitted Spanish green olives
- ¼ cup red wine vinegar
- 4 garlic cloves, peeled, smashed or garlic confit
- 2 bay leaves
- 1 tbsp dried oregano
- ¼ cup or garlic confit oil
- 1 tbsp unsalted butter
- ¼ cup chopped parsley
Green Bean Ingredients
- 1 ½ lbs. fresh green beans, trimmed
- 1 tbsp minced garlic
- 1 tbsp olive oil
- Salt and pepper
- â…” cup Parmesan cheese, shredded
- Buttered toasted bread crumbs (optional)
- 2 bacon slices, cooked and chopped
Pork Marbella Directions
- Season pork with salt. Let sit 15 minutes while you prepare the marinade.
- Combine wine, dates, brown sugar, capers and brine, olives, vinegar, garlic, bay leaves, oregano, and ¼ cup oil in a large resealable plastic bag. Add pork, seal tightly, pressing as much air out of the bag as possible, and turn to coat. Chill at least 2 hours or up to overnight.
- Place pork in a cast iron skillet or oven safe pan with sides. Pour marinade over pork. In Gourmet setting, choose Meat, Pork, Tenderloin and follow instructions for cooking. No preheat required and set your rack position to #3. Be sure to use the Wolf temperature probe so the internal temperature of the pork can be monitored.
- Transfer pork to a cutting board and let rest 10 minutes. Return pan to medium-high heat. Add butter and cook, swirling pan occasionally, until slightly reduced, 3–5 minutes. Stir in parsley.
- Slice tenderloin crosswise against the grain. Transfer to a platter and spoon pan sauce over.
Green Bean Directions
- Combine green beans, garlic, oil, salt, and pepper in a large bowl, tossing to coat. Spread in a single layer on a rimmed baking sheet.
- Using the Gourmet mode, choose Vegetables, Roasted, and following cooking instructions. Set rack to position #4. Allow oven to preheat according to instructions.
- Cook for 12 minutes. Sprinkle green beans with Parmesan, and continue to bake until Parmesan has melted, about 1 minute.
- Remove from oven, and sprinkle with bacon and bread crumbs if using.
