Carrot Top Pesto
Makes: 1 cup
INGREDIENTS:
● 1 cup loosely packed fresh carrot tops
● ⅓ cup shredded raw carrot
● ⅓ cup salted roasted cashews
● 1 small garlic clove
● Juice of 1 lemon, about 4 tbsp
● ⅓ cup olive oil
● 1 tsp kosher salt
DIRECTIONS:
Combine carrot tops. Shredded carrot, cashews, garlic, lemon juice, olive oil, and salt in food processor and blend until the mixture forms a medium-smooth paste.
