Chermoula
INGREDIENTS:
● 2 garlic cloves, chopped
● 1 tsp kosher salt
● 1-2 tsp cumin seeds, crushed or ground
● 1 fresh red chile, seeded and chopped
● Juice of 1 lemon, preferably Meyer lemon
● 2 tbsp olive oil
● Small bunch of cilantro, roughly chopped and/or flat leaf parsley
DIRECTIONS:
Use a mortar and pestle to pound the garlic and chile with salt to form a paste. Add the cilantro and parsley leaves and pound to a coarse paste. Beat in cumin and paprika and bind well with the olive oil and lemon juice. Alternatively, you can combine everything gently in food processor or blender.
