Plain Buttery Couscous

Makes: 8-12 servings


● 4 cups couscous, rinsed and drained
● 1 tsp salt
● 3 ½ cups warm water
● 4 tbsp olive oil
● 4 tbsp butter, broken into little pieces
● 1 tbsp butter for almonds
● 4-6 tbsp blanched, slivered almonds


Preheat oven to 350°F. Place couscous in oven safe dish. Stir in salt and water. Leave for 10 mins. Using fingers, rub the oil into couscous to break up clumps. Scatter butter over the surface and cover with foil or wet parchment paper. Put in preheated oven for 15 mins, until heated through. Meanwhile, prepare the almonds by melting butter in heavy skillet over medium heat. Add almonds and cook, stirring until they begin to turn golden. Remove and drain on paper towels. Remove couscous from oven and fluff with fork.
