Cabbage Apple Slaw

Makes: 4 cups


● ½ head cabbage, shredded
● 2 granny smith apples, cut into matchsticks (not peeled)
● ¼ cup mint leaves
● ¼ cup cilantro leaves
● 2 garlic cloves or garlic confit cloves
● 3 tbsp fish sauce
● 3 tbsp lime juice
● 3 tbsp rice vinegar
● 5 tbsp sugar


Combine garlic cloves, fish sauce, lime juice, rice vinegar, and sugar and whisk until sugar is dissolved. Set aside. When ready, combine cabbage, apples, mint leaves and cilantro leaves with slaw sauce (lightly dress). Serve.
