Puff Pastry with Caramelized Onions, Triple Cream Cheese, and Thyme Tarts

Makes: Approximately 24

● 4 sweet onions
● 6 tbsp butter
● 2 tbsp olive oil
● Salt and pepper
● 6 oz triple cream cheese, rind removed
● 4 thyme sprigs
● 2 sheets puff pastry cut into small bite-sized rounds or squares
● Butter to brush

Heat butter and olive oil over medium heat. Add the onions and cook, stirring occasionally, until onions are brown. It might take from 20-30 minutes for onions to brown. Add in leaves of 2 thyme sprigs once caramelized. Cut puff pastry into desired sizes. Using a fork, dock the edges to create a center. Place on prepared baking sheet and bake in oven on convection 325°F for 8 minutes or until golden. Immediately brush with butter when removing from oven. Serve by placing onions in the center and topping with small piece of triple cream cheese and few leaves of thyme.
