Reverse Seared Filet

Makes: 4 servings

INGREDIENTS:

● 4-5 oz filets or beef cut of choice
● Salt and pepper
● Garlic cloves and thyme sprigs
● Butter or oil


DIRECTIONS:

Preheat oven to 250°F roast mode. Place room temp steaks on rack over roasting pan and top with butter or oil and garlic and thyme sprigs, if desired. Place temp probe in thickest part of meat and set on Wolf oven to 131°F for medium rare and 135°F for medium. Cook until temp probe alerts. Bring out and allow to rest up to 2 hours. Sear off in hot pan with oil/butter, griddle, charbroiler, or outdoor grill. Serve.
